I didnt get a chance to reply to you earlier cause i was busy trying to loot our corpses, but I dont believe this is a bug, stab can still go off when he is engaged with me if he is targetting you, so long as i dont hit him and interrupt him, which i didnt, you are only safe from stab if you are engaged, not just the stabber.

had you been in room before?
Looks as if it's a stab walked back in to, hard to tell without seeing bit more of log.
Stab unlike charge/skewer will continue to completion engaged as long as defence isn't broken.
The check for engagement is only on the target.
